Petal's weed, bacon, onion, cheese and tomato quiche (without pastry)

I used a male plant to make this easy quiche without pastry (because my frozen pastry was too old to use) - of course if you prefer pastry please use!

Please note that you can use whatever ingredients you prefer or have in your home eg if you don't like tomatoes don't use them etc. :)

 

This recipe serves 4-6 people and can be frozen. Defrost at room temp and microwave to reheat or reheat in the oven or eat cold.

 

Serve with fresh salad or alone. Should produce a nice easy relaxed stone ...good if stressed out :)

 

Ingredients

 

8 rashers of bacon chopped to bite size

2 onions chopped

1 and 1/2 tomato chopped

1/2 tomato sliced for topping

3 cloves of garlic crushed

fresh male plant/s, leaves cut from stem and roughly chopped up (save a couple of good leaves for decoration on top)

3 cups of grated tasty cheese

9 eggs

300 mls of cream

1 cup of milk used to mix up the 1 tablespoon of self raising flour

salt and pepper to taste

Olive oil to fry up onion, garlic, bacon, tomato and male plant.

 

Method

 

Preheat oven to 200 degrees Celsius (not fan forced oven)

 

Grease a suitable sized oven dish/pan (I used the spray oil)

 

Heat oil in a frying pan on medium-high and add chopped onions and garlic and cook until tender/opaque then add the bacon and cook until the fat is reduced and a nice smell (not brown but limp - about 10 mins on medium heat). Add your chopped up weed and stir in then add your chopped tomato and cook for about 10 minutes, stirring every now and then. take off heat.

 

Crack your eggs into a suitable sized bowl and whisk until combined

Add your cream and your self raising flour/milk mixture and stir into the eggs.

Add salt and pepper into the egg mix

Add 1 1/2 cups of the grated cheese into the egg mix an stir to combine.

 

Combine the fry up mixture of bacon, onion, garlic, tomato and weed into the egg mix and stir until evenly distributed.

 

Pour the mixture into your greased pan and sprinkle the rest of the grated cheese over the top.

 

Place on the middle rack of your oven and cook for 25 minutes then remove and add your decorations of weed leaves and sliced tomatoes and cook for a further 10-15 minutes until golden brown and a knife pulls out cleanly (with just oil on it) :)

 

Bon appetite!! and of course any of these ingredients can be swapped for whatever you have around or you like (except for the eggs) :weed:

Fry up your bacon, onions and garlic

When onions opaque and bacon limp add chopped weed

Stir in your weed and add tomatoes

Stir in the fry up to your egg mixture and pour into a suitable size  greased pan/flan

Cook for 25 minutes on centre rack at 200 celsius before adding top decorations of week leaves or tomatoes etc then cook for a further 10-15 mins.

I'm with you Bunny, thanks hun...just pigged out on this with my own home grown lettuce, mint and lemon thyme as a salad and I made mum's mayo to go with it...bloody delish!

It looks yummy does that Petal. When i`ve made them b4 i use a shortcrust pastry so more tart like. Oh yes i can cook by the way :D
