Petal's Potato, Leek and Bacon Soup

pretty self explanatory with the pics :)

 

I added various herbs, garlic and cream with the potatos, leeks, bacon and chicken stock

 

Serve with crusty bread and crispy bacon bits and parsley

 

 

frying up the bacon

saute leeks, onion and garlic in the bacon fat and added a bit more oil (I used grape seed oil as I had it on hand)

add some home grown herbs (I used rosemary, oregano and a chillie and bay leaves)

saute spuds in with the mix

Add chicken stock

gently simmer for an hour (stir every now and then)

remove bay leaves and blitz with a blender stick

Add thickened cream

Serve with crusty bread and garnish with some parsley and crispy bacon bits

* Note - it was a bit too salty for my taste (with the bacon and bacon fat plus I added some salt which I didn't need to)

To fix it I squeezed a fresh lime into it which took away much of the saltiness (lemon will do the trick too)
