Had a hankering for banana fritters last night.
Sweet indulgence
Batter
3/4 cup plain flour
2 teaspoons baking powder
pinch of salt
150mls ice cold water
tablespoon vege oil (I used grapeseed oil)
1 banana cut into 4 pieces
small saucepan filled to 1/3rd with grapeseed oil (or any vege oil)
castor sugar and desiccated coconut mix
Icecream
maple syrup
Oil has to be very hot - test it is ready by dropping a small pea sized bit of batter into the oil. If it bubbles to the top immediately it is ready. Gently put the battered banana pieces into the oil
Fry for about 5 mins, turning them so they are evenly browned
Remove bananas from the oil and put on paper towel to drain off excess oil then roll in sugar coconut mix
Serve with ice cream and maple syrup for very sweet indulgence
Save leftover batter covered in the fridge and use to batter fish or chicken or pineapple or sausages
